Executive summary

Good evening, everybody and welcome to our restaurant Fuego de Piedra, in name of 7th semester groups, we thank you so much your valuable presence. We hope all of you to enjoy our menu that is a mix of Italian and Europe food style. Enjoy the beverages, there´s a drink for every taste. On behalf of 7th semester groups 1, 2 and 3 we hope you like our service, thank you so much.

Fuego de Piedra is an ambitious idea of a restaurant designed and organized by students of 7th semester along with the help of the chefs who give classes in the Universidad Autónoma del Estado de Hidalgo. This restaurant opens its doors to our guesses in the second week of the semester with a commensal limit of around 60 to 65 people. A new menu was improved every term from the semester in order to offer a new experience to all the consumers, that is why, this final service is very important to prove and show the improvement of the skills acquired.

The food and beverages of this restaurant has European style, giving the commensal an Italian, French and even Spanish style experience of fooding, even most of the drinks are based on white and red wine.

The purpose of this restaurant is to give an example on how what was learned during the semester be applied, to offer the dinner an excellent service with all the cooking techniques set on a 3-course menu.

All students have an assignment that was given by the Restaurant Operation chefs, students of the three groups were mixed in three areas: kitchen, service and beverage bar, each one commanded by the chefs. This has helped to learn how to  work in team, and about new ways of working, not necessary in the kitchen, but also outside. This idea was decided based on each students’ skills, being the chefs the ones to assign students based on them.

Restaurant Fuego de Piedra is the first service in the Gastronomy degree history due to 220 guests are invited, having the three groups working together, providing a new work and learn experience and about every student in each area.
